Thai Massaman Curry Paste
Ingredients
- 1 tbsp Coriander Seeds
- 1 tbsp Cumin Seeds
- 6 Cloves
- 1 Cinnamon Stick just a small one
- 1 Star Anise
- 5 tbsp Vegetable Oil
- 2 Shallots
- 2 cloves Garlic grated
- 2.5 cm Fresh Ginger grated
- 1 Red Chilli finely chopped
- 1 stalk Lemongrass Stalk finely sliced
- 2 tbsp Fish Sauce
- 1/2 tsp Nutmeg grated
Instructions
- Use a dry heated frying pan. Combine the Coriander, Cumin, Cloves, Cinnamon and Star Anise and fry until fragrant.
- Take out and add oil to the pan. Sweat the Shallots, Garlic, Chilli, Ginger and Lemongrass until softened.
- Combine the onion mixture; the toasted spices, the nutmeg and the fish sauce and blend until smooth.
