Aloo (sort of!) Indian spiced roasted potato cubes
Ok so it is not a proper Aloo … but this really changed up fairly standard roasted potato cubes
Ingredients
- 1 kilogram potato Maris Pipers, peeled and diced into 1/2 inch cubes
- 1 Onion medium, finely chopped
- 1 Fresh Ginger About 1 inch piece grated
- 2 cloves Garlic crushed
- 2 tbsp Fresh Coriander finely chopped
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1 Red Chilli finely chopped
- 2 Curry Leaves
- 1 pinch Asafoetida
- 2 tbsp Vegetable Oil
- 1/2 tsp Tumeric
- 1 tsp Garam Masala
- 1 tsp Ground Coriander
- 1/2 tsp Dry Mango Powder
Instructions
- Preheat the oven to 200 C.
- Heat the oil in a wok over a medium heat, and add mustard seeds, cumin seeds, dried chillis, curry leaves and Asafoetida.
- When the mustard seeds start to pop and splutter, add finely chopped onions and fry for 3 minutes over a medium heat. Add the grated ginger and crushed garlic and fry for a further two minutes until the onions are a light brown in colour.
- Add the diced potatoes, and fry for 3 minutes.
- Add the Tumeric, Garam Masala, Ground Coriander and Dried Mango powder and mix to coat the potatoes.
- Transfer the whole lot into a roasting tin, and season well with salt.
- Roast in the oven for about 45 mins until potatoes are cooked through
