Aloo (sort of!) Indian spiced roasted potato cubes

Ok so it is not a proper Aloo … but this really changed up fairly standard roasted potato cubes

Ingredients

  • 1 kilogram potato Maris Pipers, peeled and diced into 1/2 inch cubes
  • 1 Onion medium, finely chopped
  • 1 Fresh Ginger About 1 inch piece grated
  • 2 cloves Garlic crushed
  • 2 tbsp Fresh Coriander finely chopped
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 Red Chilli finely chopped
  • 2 Curry Leaves
  • 1 pinch Asafoetida
  • 2 tbsp Vegetable Oil
  • 1/2 tsp Tumeric
  • 1 tsp Garam Masala
  • 1 tsp Ground Coriander
  • 1/2 tsp Dry Mango Powder

Instructions

  • Preheat the oven to 200 C.
  • Heat the oil in a wok over a medium heat, and add mustard seeds, cumin seeds, dried chillis, curry leaves and Asafoetida.
  • When the mustard seeds start to pop and splutter, add finely chopped onions and fry for 3 minutes over a medium heat. Add the grated ginger and crushed garlic and fry for a further two minutes until the onions are a light brown in colour.
  • Add the diced potatoes, and fry for 3 minutes.
  • Add the Tumeric, Garam Masala, Ground Coriander and Dried Mango powder and mix to coat the potatoes.
  • Transfer the whole lot into a roasting tin, and season well with salt.
  • Roast in the oven for about 45 mins until potatoes are cooked through
