Brilliant BBQ Sauce

This sauce/ketchup is quite simple to make, keeps well, and I generally cannot make enough of it!

Ingredients

  • 8 Shallots finely chopped
  • 12 cloves Garlic crushed
  • 4 tbsp Olive Oil
  • 2 tsp Ground Cumin
  • 100 ml Balsamic Vinegar
  • 200 g Brown Sugar
  • 100 ml Soy Sauce
  • 2 tbsp Worcestershire Sauce
  • 200 ml Tomato Passata (strained tomatoes)
  • 4 Fresh Chillies As hot as you prefer

Instructions

  • Gently saute the shallots and garlic in the olive oil, after 5 mins add the ground cumin. fry until the onions are soft.
  • Add Balsamic vinegar and simmer for a coupl eof minutes.
  • Add brown sugar, soy sauce, worcestershire sauce and the tomato passata.
  • finely chop the chillis (seeds and all) and add.
  • simmer for 10 minutes.
  • put hot sauce into a blender and blend till fairly smooth.
  • return to heat and simmer until it thickens (about another 10 mins)

  • Bottle it once it has cooled a bit.
  • Sterelize the bottles either in dishwasher or putting into oven for 20 mins at 100 degrees

Notes

I normally make the ground cumin at the time I make the sauce.  Simply dry fry Cumin seeds until you can smell them … then grind them in a spice or coffee grinder
