Brilliant BBQ Sauce
This sauce/ketchup is quite simple to make, keeps well, and I generally cannot make enough of it!
Ingredients
- 8 Shallots finely chopped
- 12 cloves Garlic crushed
- 4 tbsp Olive Oil
- 2 tsp Ground Cumin
- 100 ml Balsamic Vinegar
- 200 g Brown Sugar
- 100 ml Soy Sauce
- 2 tbsp Worcestershire Sauce
- 200 ml Tomato Passata (strained tomatoes)
- 4 Fresh Chillies As hot as you prefer
Instructions
- Gently saute the shallots and garlic in the olive oil, after 5 mins add the ground cumin. fry until the onions are soft.
- Add Balsamic vinegar and simmer for a coupl eof minutes.
- Add brown sugar, soy sauce, worcestershire sauce and the tomato passata.
- finely chop the chillis (seeds and all) and add.
- simmer for 10 minutes.
- put hot sauce into a blender and blend till fairly smooth.
- return to heat and simmer until it thickens (about another 10 mins)
- Notes
- Bottle it once it has cooled a bit.
- Sterelize the bottles either in dishwasher or putting into oven for 20 mins at 100 degrees
Notes
I normally make the ground cumin at the time I make the sauce. Simply dry fry Cumin seeds until you can smell them … then grind them in a spice or coffee grinder
