Cath’s Perfect Buffalo Wings
This recipe perfectly recreates the flavour of the buffalo wings you get in decent Tex-Mex restaurants
Servings 4 people
Ingredients
- 4 tsp Garlic Powder
- 4 tsp Smoked Paprika
- 2 tsp Cayenne Pepper
- 1 tsp Black Peppercorns ground
- 1 tsp Salt
- 20 Chicken Wing jointed and tips removed
- 50 g Butter
- 75 ml Frank’s Hot Sauce
Instructions
Make the Dry rub
- You can make a load of this up and keep it so you can use it whenever I want. Combine : 4 parts Garlic Powder 4 parts Smoked Paprika 2 parts Cayenne Pepper 1 part Black Pepper 1 part Salt
Make the Hot Sauce
- Use half a 150ml bottle of hot sauce for 20 wings, then add 50g butter and a few dessert spoons of the rub (without flour)
Cooking the Wings
- Take 3 parts dry rub and add 1 part flour
- Coat the chicken wings in the rub with flour
- Bake on quite a high temperature until crispy
- Take out of oven and add sauce while still hot
