Homemade Pizza Topping

Simple and quick to make Pizza topping.  I make it in batches and freeze it.

Ingredients

  • 4 cloves Garlic crushed
  • Basil Leaves A small handful
  • 1 tsp Salt
  • 0.5 tsp Black Pepper Freshly ground
  • 800 g Tinned tomatoes 2 tins
  • 400 g tomato puree
  • 2 tsp Sugar
  • 2 tsp Balsamic Vinegar

Instructions

Make the Pizza Topping

  • Blitz the garlic, basil salt and pepper in a food processor.
  • Add tinned tomatoes, tomato puree, sugar and balsamic vinegar
  • Blitz until smooth.

Freezing portions

  • Fill a twelve muffin, muffin tin with the topping.  There should be just enough for twelve portions. Freeze overnight.
  • Remove from freezer and then sit muffin tin in a tray of hot water for 10 seconds.  You should now be able to remove the frozen portions.  
  • At this point I vacuum seal each portion and return it to the freezer, which is about the amount needed for a 12 inch pizza.
