Jamie’s Plum and Almond Tart

This one is worth the effort if you want a very different dessert

Ingredients

  • 350 g Blanched Almonds
  • 300 g Unsalted Butter
  • 300 g Caster Sugar
  • 3 Eggs
  • Pistachio Nut A handful
  • Jamie’s Sweet Pastry See other recipe
  • 6 Plums halved and stoned
  • 3 tbsp Vanilla Sugar

Instructions

  • Make and Blind Bake the flan.
  • Use a food processor to blitz the Almonds … almost a powder but some texture is good.
  • Cream the Butter and Sugar.
  • Add Almonds and lightly beaten Eggs. Fold it together then add the Pistachio nuts.
  • Chill it for a bit! Oh, and sprinkle the Sugar over the halved plums and leave for at least 10 minutes.
  • Fill Flan with mixture and then Push the Halved Plums into the mixture cut-side upwards.
  • Bake at 180oC for 1 hour.  Remove from oven and leave to stand for 30 minutes.
