Mrs N’s Hebridean Scones
Scones the Hebridean way. Delicious with butter and cheese or jam and cream.
Servings 20 scones
Ingredients
- 1 lb self raising flour
- 1 tsp baking powder
- 1 oz caster sugar
- 4 oz butter
- 250 ml buttermilk use full fat milk instead if need be
- 1 pinch salt
- milk to brush the tops with
Instructions
- Preheat the oven to 250 and put two baking trays into the oven.
- Add the flour, baking powder, caster sugar and salt into a bowl. Then rub in the butter until you have a crumb mixture.
- Using a knife stir in the buttermilk. do this gently.
- Once you have a well mixed dough, put onto a flourer board.
- Gently roll the dough into a disc about 1/2 inch thick.
- Cut roughly into squares and then brush with milk.
- Remove the hot baking trays, flour them and then put the scones on and return to the oven.
- Cook for 10 minutes.
- Remove from oven and place scones on a wire rack to cool
