Chicken Marbella

Ingredients
- 0.5 cups Capers
- 0.25 cup Dried Oregano
- 0.5 cup Olive Oil
- 6 Bay Leaves
- 4 Chickens about 2.5 lbs each quartered
- 1 Garlic Bulb peeled and grated or pureed
- 0.5 cup Spanish Olives pitted
- 0.25 cup Coriander finely chopped
- 1 cup White WIne
- 0.5 cup White Wine Vinegar
- 1 cup pitted prunes
- 1 cup Brown Sugar

Preparation
- In a large plastic bag combine the chicken quarters, garlic, coriander,pepper and salt, vinegar, olive oil, prunes, olives, capersand bay leaves.
- Stick it in the fridge overnight
Cooking
- Preheat oven to 180C
- Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine all around them.
- Bake for 1 hour, basting frequently
- With a slotted spoon transfer chicken, prunes, olives and capers to serving platter. Moisten with a few spoonfuls of pan juices and sprinkle with coriander.
- Pass remaining pan juices into a sauceboat.
