Izzys Veggie Burgers

A pretty simple chickpea based Veggie Burger … Izzy loves them

Ingredients

  • 1 400 g Can Chickpeas drained
  • 1 Lemon Zest and half the juice
  • 1 tsp Cumin Toasted and ground
  • 1 Bunch of Coriander (small) chopped
  • 1 Egg
  • 100 g Breadcrumbs
  • ½ Medium Red Onion finely diced

Instructions

Making

  • In a food processor blitz the chickpeas, lemon zest, lemon juice, cumin, half the coriander and the egg. Season with salt and pepper
  • Scrape out into a large bowl. Mix in the breadcrumbs and diced onion.
  • Divide into four parts and using a burger press, form four burgers.
  • Put into the fridge for at least an hour

Cooking

  • Heat the oil in a frying pan over a medium heat. Fry the burgers for 5 mins on each side.
