Izzys Veggie Burgers
A pretty simple chickpea based Veggie Burger … Izzy loves them
Servings 4 burgers
Ingredients
- 1 400 g Can Chickpeas drained
- 1 Lemon Zest and half the juice
- 1 tsp Cumin Toasted and ground
- 1 Bunch of Coriander (small) chopped
- 1 Egg
- 100 g Breadcrumbs
- ½ Medium Red Onion finely diced
Instructions
Making
- In a food processor blitz the chickpeas, lemon zest, lemon juice, cumin, half the coriander and the egg. Season with salt and pepper
- Scrape out into a large bowl. Mix in the breadcrumbs and diced onion.
- Divide into four parts and using a burger press, form four burgers.
- Put into the fridge for at least an hour
Cooking
- Heat the oil in a frying pan over a medium heat. Fry the burgers for 5 mins on each side.
