Chilli Jam with Mango and Lime
Very Spicy Chilli Jam
Servings 5 jars
Ingredients
- 400 g Ring of Fire Chillis Or other hot chilli
- 2 Mangos You want them ripe
- 1 Lime
- 500 g caster sugar
- 350 ml Cider Vinegar
- Liquid Pectin
Instructions
Prepare the Chillies
- Make sure you wear latex gloves for this bit.Top and then half each chilli and discard the seeds, It does not matter if some seeds make it.
- Dice the Mango, zest and squeeze the Lime.
- Put the Chillies, Mango and Lime into a food processor and blitz until there are no big bits of chilli left.
Making the Jam
- Add the mixture to a large, heavy-based pan. Add the sugar and vinegar. Place the pan over a medium heat until the sugar has dissolved.
- Now increase the heat and bring to a boil.
- Reduce the heat to low and simmer the jam for 45 minutes, stirring the pan from time to time to stop the jam from sticking
- Take the jam off the heat and decant into sterilised jars.
- Can the jars for 10 mins
