Crumpet Eggy Bread

Ingredients
- 2 crumpets
- 2 medium eggs
- 2 tbsp milk or cream if you’re feeling indulgent
- Pinch of salt
- Small knob of butter or butter + a little oil
Instructions
Lightly toast the crumpets
- Just until dry on the outside — don’t brown them. This stops them collapsing when soaked.
Beat the eggs
- Whisk eggs, milk, salt (and any sweet/savoury extras).
Soak the crumpets
- Place crumpets hole-side down first for 30–45 seconds, then flip and soak another 30 seconds.
- You want them well-filled but not disintegrating.
Fry gently
- Heat butter in a non-stick pan over medium-low heat.
- Cook crumpets for 2–3 minutes per side until golden and set through the middle.
