Lemongrass-Scented Coconut Rice
Makes Basmati rice more interesting.

Ingredients
- 3 cups Basmati Rice
- 400 g Coconut Milk
- 1 Lemongrass Stalk
- 50 g Pistachio Nuts a small handful
- 3 Medjool Dates finely chopped
Instructions
- Add three cups of rice into a pan.
- Warm the coconut milk in a microwave just enough that the solid and liquid part combine. Make up the coconut milk to six cups using cold water and add to the pan.
- Bruise the lemongrass … I use a rollingpin and add to the pan
- Gently bring to the boil. As soon as it is boiling, put the lid on the pan and turn the heat right down.
- Simmer for 7 minutes and then remove from the heat.
- Leave to stand for three minutes with the lid on the pan.Remove the Lemongrass Stalk and then fold in the nuts and dates.
