Lemongrass-Scented Coconut Rice

Makes Basmati rice more interesting.

Ingredients

  • 3 cups Basmati Rice
  • 400 g Coconut Milk
  • 1 Lemongrass Stalk
  • 50 g Pistachio Nuts a small handful
  • 3 Medjool Dates finely chopped

Instructions

  • Add three cups of rice into a pan.
  • Warm the coconut milk in a microwave just enough that the solid and liquid part combine.  Make up the coconut milk to six cups using cold water and add to the pan.
  • Bruise the lemongrass ... I use a rollingpin and add to the pan
  • Gently bring to the boil.  As soon as it is boiling, put the lid on the pan and turn the heat right down.
  • Simmer for 7 minutes and then remove from the heat.
  • Leave to stand for three minutes with the lid on the pan.
    Remove the Lemongrass Stalk and then fold in the nuts and dates.
