Lemongrass-Scented Coconut Rice
Makes Basmati rice more interesting.

- 3 cups Basmati Rice
- 400 g Coconut Milk
- 1 Lemongrass Stalk
- 50 g Pistachio Nuts a small handful
- 3 Medjool Dates finely chopped
Add three cups of rice into a pan.
Warm the coconut milk in a microwave just enough that the solid and liquid part combine. Make up the coconut milk to six cups using cold water and add to the pan.
Bruise the lemongrass ... I use a rollingpin and add to the pan
Gently bring to the boil. As soon as it is boiling, put the lid on the pan and turn the heat right down.
Simmer for 7 minutes and then remove from the heat.
Leave to stand for three minutes with the lid on the pan.Remove the Lemongrass Stalk and then fold in the nuts and dates.
