Thai Massaman Curry Paste

Ingredients

  • 1 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 6 Cloves
  • 1 Cinnamon Stick just a small one
  • 1 Star Anise
  • 5 tbsp Vegetable Oil
  • 2 Shallots
  • 2 cloves Garlic grated
  • 2.5 cm Fresh Ginger grated
  • 1 Red Chilli finely chopped
  • 1 stalk Lemongrass Stalk finely sliced
  • 2 tbsp Fish Sauce
  • 1/2 tsp Nutmeg grated

Instructions

  • Use a dry heated frying pan. Combine the Coriander, Cumin, Cloves, Cinnamon and Star Anise and fry until fragrant.
  • Take out and add oil to the pan. Sweat the Shallots, Garlic, Chilli, Ginger and Lemongrass until softened.
  • Combine the onion mixture; the toasted spices, the nutmeg and the fish sauce and blend until smooth.
