Thai Massaman Curry Paste
- 1 tbsp Coriander Seeds
- 1 tbsp Cumin Seeds
- 6 Cloves
- 1 Cinnamon Stick just a small one
- 1 Star Anise
- 5 tbsp Vegetable Oil
- 2 Shallots
- 2 cloves Garlic grated
- 2.5 cm Fresh Ginger grated
- 1 Red Chilli finely chopped
- 1 stalk Lemongrass Stalk finely sliced
- 2 tbsp Fish Sauce
- 1/2 tsp Nutmeg grated
Use a dry heated frying pan. Combine the Coriander, Cumin, Cloves, Cinnamon and Star Anise and fry until fragrant.
Take out and add oil to the pan. Sweat the Shallots, Garlic, Chilli, Ginger and Lemongrass until softened.
Combine the onion mixture; the toasted spices, the nutmeg and the fish sauce and blend until smooth.
