Smoked Salmon with Lemon and Capers
Very simple dish, but the flavour from just a few ingredients is outstanding

Ingredients
- 1 tbsp olive oil
- 3 cloves garlic crushed
- 400 ml creme fraiche
- 125 ml pasta water
- 400 g spaghetti or linguine
- 2 tbsp capers
- 1 lemon zest only
- 2 tbsp Parmesan cheese grated
- 1 pinch sea salt
- 200 g smoked salmon cut into thin strips
Instructions
- Cook the pasta … you are going to want some of the water it is cooking in, so dont tip it down the sink.
- When the pasta is nearly done, heat 1 tbsp of olive oil in a large pan over a low heat. Gently cook the crushed garlic for about a minute.
- Drain the pasta reserving 125ml of the cooking water.
- Add a good pinch of sea salt, the lemon zest, the capers and the creme fraiche and allow to heat through.
- Add the 125ml of pasta water and stir to combine.
- Gently the pasta into the sauce. Then fold in the smoked salmon strips.
- Serve immediately with the Parmesan cheese sprinkled over the top
