Smoked Salmon with Lemon and Capers

Very simple dish, but the flavour from just a few ingredients is outstanding

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic crushed
  • 400 ml creme fraiche
  • 125 ml pasta water
  • 400 g spaghetti or linguine
  • 2 tbsp capers
  • 1 lemon zest only
  • 2 tbsp Parmesan cheese grated
  • 1 pinch sea salt
  • 200 g smoked salmon cut into thin strips

Instructions

  • Cook the pasta … you are going to want some of the water it is cooking in, so dont tip it down the sink.
  • When the pasta is nearly done, heat 1 tbsp of olive oil in a large pan over a low heat. Gently cook the crushed garlic for about a minute.
  • Drain the pasta reserving 125ml of the cooking water.
  • Add a good pinch of sea salt, the lemon zest, the capers and the creme fraiche and allow to heat through.
  • Add the 125ml of pasta water and stir to combine.
  • Gently the pasta into the sauce. Then fold in the smoked salmon strips.
  • Serve immediately with the Parmesan cheese sprinkled over the top
