Smoked Salmon with Lemon and Capers
Very simple dish, but the flavour from just a few ingredients is outstanding

- 1 tbsp olive oil
- 3 cloves garlic crushed
- 400 ml creme fraiche
- 125 ml pasta water
- 400 g spaghetti or linguine
- 2 tbsp capers
- 1 lemon zest only
- 2 tbsp Parmesan cheese grated
- 1 pinch sea salt
- 200 g smoked salmon cut into thin strips
Cook the pasta ... you are going to want some of the water it is cooking in, so dont tip it down the sink.
When the pasta is nearly done, heat 1 tbsp of olive oil in a large pan over a low heat. Gently cook the crushed garlic for about a minute.
Drain the pasta reserving 125ml of the cooking water.
Add a good pinch of sea salt, the lemon zest, the capers and the creme fraiche and allow to heat through.
Add the 125ml of pasta water and stir to combine.
Gently the pasta into the sauce. Then fold in the smoked salmon strips.
Serve immediately with the Parmesan cheese sprinkled over the top
