Ingredients

  • 0.5 cups Capers
  • 0.25 cup Dried Oregano
  • 0.5 cup Olive Oil
  • 6 Bay Leaves
  • 4 Chickens about 2.5 lbs each quartered
  • 1 Garlic Bulb peeled and grated or pureed
  • 0.5 cup Spanish Olives pitted
  • 0.25 cup Coriander finely chopped
  • 1 cup White WIne
  • 0.5 cup White Wine Vinegar
  • 1 cup pitted prunes
  • 1 cup Brown Sugar

Instructions

Preparation

  • In a large plastic bag combine the chicken quarters, garlic, coriander,pepper and salt, vinegar, olive oil, prunes, olives, capersand bay leaves.
  • Stick it in the fridge overnight

Cooking

  • Preheat oven to 180C
  • Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine all around them.
  • Bake for 1 hour, basting frequently
  • With a slotted spoon transfer chicken, prunes, olives and capers to serving platter. Moisten with a few spoonfuls of pan juices and sprinkle with coriander.
  • Pass remaining pan juices into a sauceboat.
