In a large plastic bag combine the chicken quarters, garlic, coriander,pepper and salt, vinegar, olive oil, prunes, olives, capersand bay leaves.
Stick it in the fridge overnight

Preheat oven to 180C
Arrange chicken in a single layer in one or two large, shallow baking pans and spoon marinade over it evenly. Sprinkle chicken pieces with brown sugar and pour white wine all around them.
Bake for 1 hour, basting frequently
With a slotted spoon transfer chicken, prunes, olives and capers to serving platter. Moisten with a few spoonfuls of pan juices and sprinkle with coriander.
