Tahini
SImple to make, so always keep some sesame seeds handy.
Ingredients
- 1 cup Sesame seeds
- 2 to 4 tbsp neutral flavoured oil so a light olive oil or grape seed oil
- Salt to taste
Instructions
- Dry fry the sesame seeds over a medium heat in a large frying pan. Toast until the seeds become fragrant and lightly coloured, but not brown! Keep them moving in the pan … dont turn your back on them … they will burn! 🙂
- Transfer onto a large baking sheet and allow to cool
- Blitz the seeds in a food processor for about a minute until a crumbly paste forms. Add a good pinch of salt
- Add three tablespoons fo the oil and blitz for 2 to 3 minutes, stopping to scrape the bottom and sides of the food processor a couple of times.
- The Tahini should be smooth and pourable … add an additional tablespoon of oil if necessary
- Taste Tahini and add mire salt if required.
