Tzatziki
Really flavoursome Tzatziki recipe
Servings 1 cups
Ingredients
- 1 Cucumber
- ½ tsp salt
- 1 ¼ cups Greek yogurt
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 tbsp fresh chopped dill
- 3 garlic cloves crushed
- ½ tsp dried oregano
- Salt and pepper to taste
Instructions
- Slice cucumber in half lengthwise and scrape out the seeds using a teaspoon. Now VERY finely dice the cucumber.
- Add diced cucumber to a fine mesh sieve and sprinkle with ½ teaspoon salt. Stir and let sit 15 minutes.
- After 15 minutes, place the cucumber on a clean cotton tea towel, and use that to squeeze out the water from the cucumber.
- Add all Tzatziki ingredients to a medium bowl and stir to combine. Season with salt and pepper to taste (probably won’t need salt). Taste and add additional dill, or lemon juice if desired. Best if chilled at least one hour.
