Baked Feta Sauce
Lovely Cooling sauce

Ingredients
- 200 g feta block
- 1 tbsp olive oil
- Freshly ground black pepper
- Optional: pinch Aleppo pepper or chilli flakes very mild
- 250 g Greek yoghurt full-fat
- 1 small garlic clove very finely grated (optional)
- 1 –2 tbsp lemon juice
- To finish optional: olive oil, chilli flakes, herbs
Instructions
Bake the feta
- Heat oven to 200°C fan.
- Make a little foil boat, place feta inside.
- Drizzle with olive oil, grind over pepper.
- Bake 15–20 minutes until soft and creamy but not collapsed.
Whip the dip
- Tip the hot feta into a bowl.
- Add yoghurt, garlic (if using), and lemon juice.
- Mix hard with a fork or whisk until smooth but not totally puréed.
Finish
- Spoon into a bowl, swirl the top, drizzle with olive oil and a tiny pinch of chilli flakes.
