Baked Feta Sauce

Ingredients

feta
block

tbsp
olive oil
Freshly ground black pepper
Optional: pinch Aleppo pepper or chilli flakes
very mild

g
Greek yoghurt
full-fat
1
small garlic clove
very finely grated (optional)

–2 tbsp lemon juice
To finish
optional: olive oil, chilli flakes, herbs
Instructions
Bake the feta
Heat oven to 200°C fan.
Make a little foil boat, place feta inside.
Drizzle with olive oil, grind over pepper.
Bake 15–20 minutes until soft and creamy but not collapsed.
Whip the dip
Tip the hot feta into a bowl.
Add yoghurt, garlic (if using), and lemon juice.
Mix hard with a fork or whisk until smooth but not totally puréed.
Finish
Spoon into a bowl, swirl the top, drizzle with olive oil and a tiny pinch of chilli flakes.
