Baked Feta Sauce

Ingredients

  • 200 g feta block
  • 1 tbsp olive oil
  • Freshly ground black pepper
  • Optional: pinch Aleppo pepper or chilli flakes very mild
  • 250 g Greek yoghurt full-fat
  • 1 small garlic clove very finely grated (optional)
  • 1 –2 tbsp lemon juice
  • To finish optional: olive oil, chilli flakes, herbs

Instructions

Bake the feta

  • Heat oven to 200°C fan.
  • Make a little foil boat, place feta inside.
  • Drizzle with olive oil, grind over pepper.
  • Bake 15–20 minutes until soft and creamy but not collapsed.

Whip the dip

  • Tip the hot feta into a bowl.
  • Add yoghurt, garlic (if using), and lemon juice.
  • Mix hard with a fork or whisk until smooth but not totally puréed.

Finish

  • Spoon into a bowl, swirl the top, drizzle with olive oil and a tiny pinch of chilli flakes.
