Royal-Style Couscous

Ingredients
Base
- 200 g medium couscous
- 200 ml boiling stock
- 1 tbsp olive oil
- Pinch salt
- Zest of ½ orange
Flavouring Layer
- 1 tbsp butter
- 1 tsp cinnamon
- ½ tsp cumin
- 1 tbsp chopped pistachios
- 1 tbsp pine nuts
- 1 tbsp chopped walnuts
- 1 handful sour cherries
- Tiny dice of 2 Medjool date
- Chopped coriander
Instructions
Make the Base
- Put Couscous, olive oil, salt and orange zest into a bowl
- Add boiling stock, stir and cover for 10 mins.
- gently fluff with a fork
Flavouring Layer
- Toast the nuts in a dry pan
- fold ingredients into Couscous
