Ingredients

Base

  • 200 g medium couscous
  • 200 ml boiling stock
  • 1 tbsp olive oil
  • Pinch salt
  • Zest of ½ orange

Flavouring Layer

  • 1 tbsp butter
  • 1 tsp cinnamon
  • ½ tsp cumin
  • 1 tbsp chopped pistachios
  • 1 tbsp pine nuts
  • 1 tbsp chopped walnuts
  • 1 handful sour cherries
  • Tiny dice of 2 Medjool date
  • Chopped coriander

Instructions

Make the Base

  • Put Couscous, olive oil, salt and orange zest into a bowl
  • Add boiling stock, stir and cover for 10 mins.
  • gently fluff with a fork

Flavouring Layer

  • Toast the nuts in a dry pan
  • fold ingredients into Couscous
