Pickled Spring Onions
Very simple half dressing half side. Great spread over a salad.

- 6 Spring Onions
- 0.25 cup White Wine Vinegar
- 0.25 Water
- 0.5 tsp Sea Salt
- 0.5 tsp Honey
- 1 tbsp Chive finely sliced
Whisk vinegar, water, salt and honey together in the bottom of a small container with a lid until the salt and honey dissolve.
Slice the bulbs and paler green parts into very thin coins and submerge them in the vinegar mixture. Finely slice the chives and add those too
Cover and put in fridge until you're ready to use them; if you can put them aside for an hour or even overnight, even better.
