Mrs N's Hebridean Scones

Scones the Hebridean way. Delicious with butter and cheese or jam and cream.

Ingredients

  • 1 lb self raising flour
  • 1 tsp baking powder
  • 1 oz caster sugar
  • 4 oz butter
  • 250 ml buttermilk use full fat milk instead if need be
  • 1 pinch salt
  • milk to brush the tops with

Instructions

  • Preheat the oven to 250 and put two baking trays into the oven.
  • Add the flour, baking powder, caster sugar and salt into a bowl. Then rub in the butter until you have a crumb mixture.
  • Using a knife stir in the buttermilk. do this gently.
  • Once you have a well mixed dough, put onto a flourer board.
  • Gently roll the dough into a disc about 1/2 inch thick.
  • Cut roughly into squares and then brush with milk.
  • Remove the hot baking trays, flour them and then put the scones on and return to the oven.
  • Cook for 10 minutes.
  • Remove from oven and place scones on a wire rack to cool
