Chilli Jam with Mango and Lime

Ring of Fire Chillis
Or other hot chilli

Mangos
You want them ripe

Lime

Instructions
Prepare the Chillies
Make sure you wear latex gloves for this bit.
Top and then half each chilli and discard the seeds, It does not matter if some seeds make it.
Dice the Mango, zest and squeeze the Lime.
Put the Chillies, Mango and Lime into a food processor and blitz until there are no big bits of chilli left.
Making the Jam
Add the mixture to a large, heavy-based pan. Add the sugar and vinegar. Place the pan over a medium heat until the sugar has dissolved.
Now increase the heat and bring to a boil.
Reduce the heat to low and simmer the jam for 45 minutes, stirring the pan from time to time to stop the jam from sticking
Take the jam off the heat and decant into sterilised jars.
